Inspired by a Sichuan dining experience in Philly's old city, it was a delightfully face numbing night of spice, Sichuan pepper and noodles. The making of Sichuan Dan Dan sauce in keeping with traditional ingredients, brings together several separately made key components. First, the in-house chili oil is made with crispy fried garlic and three traditional chili peppers. Then added with the aromatic layering of spices which include star anise, cinnamon and of course Sichuan pepper. Finally, finished with the brightness of black Chinese vinegar, the nuttiness of tahini and it's all brought together with organically brewed tamari. This make for a deeply complex, savory sauce with a flavor and spice that lingers long after the last mouthful.
