This is a spicy-green, perfectly balanced, robust Coratina olive oil. Its aroma is fabulous, and the fruitiness, bitterness, and pungency are well-balanced and harmonious between the aroma and taste profiles. The aroma is very green, with floral notes of lavender, thyme, and mint, as well as hints of herbs and green apple. The flavor deepens into tart green apple and banana, along with bitter nettles and mustard greens, and offers a capsicum finish that is bright; yet, the bitterness and almost tannic feeling linger in the mouth. Versatile and perfectly paired with almost any balsamic vinegar, this blend delivers full and rich overall flavors.
